Tutut, a traditional Indonesian dish originating from West Java. The main ingredient of tutut is fresh-water snail, and it’s not surprising that the majority of people feel disgusted when they hear that the food is made from snails. However, when processed and cooked properly, tutut becomes a delicious dish to consume. The cooking process of tutut begins with cleaning the snails by brushing their shells, removing their dirt, and soaking them in clean water for 2 days with periodically changing the water. Once cleaned, the snails are then cooked by boiling them in boiling water with various spices. These spices consist of galangal, lemongrass, bay leaves, turmeric, candlenuts, ginger, lesser galangal, shallots, garlic, coriander, cumin, pepper, and adding chili if desired for spiciness. After adding the spices, also add coconut milk and continue stirring until boiling.
