Indonesian Traditional Food Seller ; Gepuk Bandeng
Gepuk Bandeng is an Indonesian trademark food, made from milkfish (Ikan Bandeng). Gepuk is commonly known food in Indonesia, made from beef. The name of Gepuk itself sometimes used to imply the cooking method, not the food name. A commonly known method is, the beef meat is boiled into medium well, then cut into the size of half-palm size. Then using stone pestle and mortar, the meat beaten mildly to loosen all the fibers and spread its size a little bit. The meat pieces then seasoned with various Indonesian spices, and cooked in coconut milk and turmeric water. After the meat absorb all the spices and stock, it then fried in coconut oil until the color darken and the meat is done.
However, there are also variant in Gepuk and one of them is using milkfish, instead of beef. Hence, the name of Gepuk Bandeng.
